These muffins are great for breakfast or as a snack. Packed with plenty of fiber and not too much sweetness. I replace the oil for applesauce and these aren't too bad for you. They go great with a cup of coffee.
Preheat oven to 375 degrees and put 12 liners into a muffin tin.
Makes 12 muffins
What you will need:
1 1/2 C Wheat Bran
1 C Milk
1/3 C Applesauce ( I use a single snack cup)
1 Egg
2/3 C Honey or Brown Sugar
1/2 tsp Vanilla Extract
1 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1 tsp Cinnamon
1/2 C Raisins
1/4 Walnuts (optional)

In another bowl mix together the dry ingredients. Flour, baking soda, baking powder, salt and cinnamon. Pour into the bowl with wheat bran milk mixture.
In the empty bowl mix together all the wet ingredients, egg, honey, vanilla and applesauce. I try to only dirty the two bowls for this. The less dishes to clean the better!
Mix all ingredients together. Then fold in raisins and walnuts if you chose to add walnuts.
Spoon evenly into muffins tins. This will make 12 muffins. Bake at 375 degrees for 15-20 minutes or until toothpick inserted comes out clean. My convection oven takes 17 minutes.
Remove muffins from tin to cool on cooling rack.
